Nutrition & Facts: The only grain that contains vitamin A, with the yellow being higher in the vitamin than the white.  Corn is one of the top ten most common food allergens.  Many people who are allergic to common commercial corn products find they can eat popcorn, blue corn and masa.  Ground dried corn from coarsest to finest; grits, meal, flour and atole or pinole.

Uses:  Cornmeal: cornbread, muffins and casserole recipes.

Grits: Made from flint corn, used in recipes calling for grits.

Masa: Masa is the Mexican word for "dough".  It refers to the corn dough used to make tortillas, tamales, as well as other traditional Mexican dishes.

Flour:  Used to thicken sauces.

Atole or pinole: A traditional Mexican hot drink.

Products: The grain is usually sold in the bulk isle of natural food stores.  Corn meal can be found in the bulk isle and also the baking isle.  All the other forms can be found in the baking isle or the international foods section.
