agave

Nutrition & Facts: Juice is expressed from the core of the plant and then heated.  High in fructose, which is why it gets a low rating on the gylcemic index.

Uses: Like all sweeteners, best used in moderation.  To sweeten drinks when you don't want the honey taste, and for other deserts where the molasses color and taste of Rapadura will overpower the recipe.

Products: Sold in natural food stores and bulk through Amazon.com.  Great price discount if purchased in bulk.

Online: Amazon.com Wholesome Sweeteners

Recipe Tip:  Lemon custard (either on the pie or off) is great with agave.  It dissolves easily and quickly, making it simple to use in recipes.  Consider replacing it for honey in recipes as the sweetness factor is high - and when you don't want the honey taste.
